Recently I noticed that a couple of my anubias plants are starting to bolt - that is, growing much longer stems on new growth. Previously they stayed more compact. Is this a reaction to lower light in that part of the tank, or what else would cause this?

They may be trying to put up flowers? Just a guess though. I've not had an anubias put up longer stems due to low light, even when completely shaded under low light.

Yeah, it's strange that it only seems to be affecting some of my anubias - I thought perhaps it was because that side of the tank can get slightly shaded from valisneria leaves. I am also noticing that the tiger lotuses beside them are growing enormous, vibrant leaves compared to the lotuses on the opposite side . . . .

My banana plant has started doing this, and I was curious about what it meant as well. All of the stems its grown previously have been maybe 4 to 5 inches before ending in a leaf, but this last one is literally more than 2 feet long.
