Since you don't have anything else in the tank you can kill the snails with coppersafe or some other product with copper, like and algae killer.

I'm going to guess you need more light and more ferts for the plant, but that's just a guess.

Sounds like a good idea, but I haven't ever heard of using shrimp pellets either. I've heard of rodent poop. If it is a hygrophilla, I belive they are not very heavy root feeders, so it might not be necisary. Its definately not ancharis though, I can tell you that much! Actually, ignore what I asked before, because it is a new plant so it's probably still adjusting so health probably isn't a huge problem at this point.
